Roasted Sugar Snap Peas


1 pound sugar snap peas
2 teaspoons vegetable oil
1 teaspoon low-sodium soy sauce
½ teaspoon salt
¼ teaspoon black pepper


  1. Wash hands with soap and water.
  2. Preheat oven to 400 degrees F.  Lightly grease a large baking pan.
  3. Place the sugar snap peas in a large bowl. Sprinkle with oil, soy sauce, salt and black pepper. Toss to coat.
  4. Spread the peas onto the baking sheet.
  5. Bake for 8 to 10 minutes. Stir a couple times while roasting.
  6. Refrigerate leftovers within 2 hours.
