This is a simple yet delicious pancake recipe. Feel free to season it with cinnamon, nutmeg or pumpkin-pie spice. Here’s a little hack to help save time. Combine the wet ingredients ahead of time. Store the mix in the refrigerator for up to two days. You can mix the dry ingredients ahead of time, too. These can be stored in a sealed container in your cupboard.

Favorite Pancakes (without eggs)   

Maybe you don’t have eggs on hand, or you can’t eat them or choose not to. That doesn’t mean you can’t enjoy pancakes! Our Favorite Pancakes recipe can be made without eggs. Simply substitute two tablespoons of water for the egg. With or without eggs, Favorite Pancakes are delicious topped with your favorite fruits, yogurt or applesauce.

Carrot Pancakes are a great way to add more veggies to your day. They’re made with carrots and oats and flavored with vanilla and cinnamon. You can even add pumpkin-pie spice for an extra boost of flavor.  The recipe also calls for buttermilk. If you don’t have any, here’s a substitute: add 1 tablespoon of lemon juice or white vinegar to a measuring cup, then fill to the 1-cup line with milk. Stir, then let it set for a few minutes to thicken slightly before you use it.

Jack-O-Lanterns (Pumpkin Pancakes) 

It might be spring, but that doesn’t mean we can’t enjoy the wonderful flavors of fall.  These pumpkin pancakes get their flavor from a blend of brown sugar, pumpkin and pumpkin-pie spice.

Gingerbread Pancakes 

These healthy and tasty pancakes are flavored with molasses and pumpkin-pie spice. One user shared that they enjoyed this recipe served with Any Berry Sauce on top. Now that’s a wonderful combo!
