Strawberry Swirl

Strawberries and apple juice blended together to make a refreshing and tasty drink.

Ingredients

1 cup strawberries (fresh or frozen and thawed)
1 cup (8 ounces) 100% apple juice

Directions

  1. Wash hands with soap and water.
  2. Rinse fresh fruits under running water before preparing.
  3. Combine ingredients in blender and process until smooth.
  4. Serve, or freeze for 1 to 2 hours to make a slushy.
  5. Refrigerate leftovers within 2 hours.

Notes

  • If you don’t have a blender, mash strawberries with a fork. Add juice and beat with an egg beater until fairly smooth.

Delicious and simple, kids love it!  It actually reminds me of the strawberries topping served at restaurants...I bet it would be good warmed up as a replacement for maple syrup on pancakes or waffles!  

For a make-ahead summer treat, prepare Strawberry Swirl and freeze in a zip-lock bag.  When ready to serve, partially thaw in the bag, then scoop into glasses or cups.  Two cups of frozen whole strawberries, still a little icy rather than thawed, and two cups apple juice can be processed in a homestyle blender.  The mixture fits in a 1 quart bag.  This really works!  I served 250 at a school carnival last week!
