Butternut squash and apples are topped with a cinnamon-spiced oat crumble baked to a golden brown.

Ingredients

Butternut Apple Filling Ingredients:
1 small (about 1 pound) butternut squash 
3 medium tart apples, sliced 
2 Tablespoons lemon juice
½ cup packed brown sugar
1 Tablespoon corn starch
1 teaspoon ground cinnamon
½ teaspoon salt
 
Oat Topping Ingredients:
½ cup all-purpose flour 
½ cup oats (old fashioned rolled or quick-cooking)
¼ cup packed brown sugar
¼ cup margarine or butter, melted

Ingredientes para el Relleno de Calabaza y Manzana:
1 calabaza tipo “butternut” pequeña (aproximadamente 1 libra)
3 manzanas agrias medianas, cortadas en rodajas
2 cucharadas de jugo de limón amarillo
½ de taza de azúcar morena compacta
1 cucharada de maicena
1 cucharadita de canela molida
½ cucharadita de sal
 
Ingredientes para la Cubierta de Avena:
½ taza harina blanca
½ taza de avena enrolada tradicional o avena rápida
¼ de taza de azúcar morena compacta
¼ de taza de margarina o mantequilladerretida 

Directions

  1. Wash hands with soap and water.
  2. Heat oven to 375 degrees F.  Lightly grease a 13x9-inch baking dish.
  3. Peel squash and cut in half lengthwise; discard seeds. Cut squash into thin slices.
  4. In a large bowl, stir together the filling ingredients until well mixed.
  5. Pour filling into baking dish. Cover and bake for 20 minutes.
  6. In a medium bowl, stir together brown sugar, flour and oats. Mix in the margarine or butter and set aside.
  7. Remove baking dish from oven and sprinkle topping over filling. Return uncovered dish to oven.
  8. Bake 25 minutes longer or until squash and apples are tender and topping is lightly browned. Serve warm.
  9. Refrigerate leftovers within 2 hours.

Preparación

  1. Lávese las manos con agua y jabón.
  2. Precaliente el horno a 375 grados F. Engrase ligeramente un molde para hornear de 13 x 9 pulgadas.
  3. Pele la calabaza y córtela por la mitad a lo largo; deseche las semillas. Corte la calabaza en rodajas finas.
  4. En un tazón grande, revuelva los ingredientes para el relleno de calabaza y manzana hasta que estén bien mezclados.
  5. Vierta el relleno al molde para hornear. Tape y hornee por 20 minutos.
  6. En un tazón mediano, mezcle el azúcar, la harina, y la avena. Incorpore la mantequilla o margarina y revuelva. Deje a un lado.
  7. Retire el molde para hornear del horno y esparza la mezcla de avena sobre el relleno de calabaza y manzana. Devuelva el molde para hornear destapado al horno.
  8. Hornee 25 minutos más o hasta que la calabaza y las manzanas estén blandas y la cubierta esté ligeramente dorada. Sirva caliente.
  9. Refrigere lo que sobre dentro de las siguientes 2 horas.

  • Freeze extra lemon juice to use later.
