Ingredients

2 cups leeks, chopped
1 tablespoon oil
2 cups mushrooms, sliced
1 cup dry orzo (rice shaped pasta)
2 cups chicken or vegetable broth
1 ½ cups tomato, chopped
3 tablespoons cream cheese
1 teaspoon garlic powder
¼ teaspoon each salt and pepper

Ingredientes

2 tazas de puerros, picados
1 cucharada de aceite
2 tazas de hongos, en rodajas
1 taza de orzo seco (pasta en la forma de arroz)
2 tazas de caldo de pollo o caldo vegetal
1 ½ tazas de tomate, picados
3 cucharadas de queso crema
1 cucharadita de ajo en polvo
¼ cucharadita de sal y pimienta

Directions

  1. Sauté leeks in oil in a medium skillet over medium heat, stirring occasionally, until the leeks are soft (about 5 minutes).
  2. Add mushrooms and cook until soft (about 5 minutes).
  3. Stir in the orzo and toast lightly, stirring frequently, for about 3 minutes.
  4. Add broth and bring to a boil. Reduce heat to simmer, stirring occasionally, until the orzo is almost tender, about 8 minutes.
  5. Add the tomatoes and simmer until orzo is tender (about 2 minutes).
  6. Remove from heat and stir in cream cheese, garlic powder, salt and pepper. Serve warm.
  7. Refrigerate leftovers within 2 hours.

Preparación

  1. Saltee los puerros en una sartén mediana sobre fuego medio, revolviendo ocasionalmente, hasta que los puerros estén suaves (aproximadamente 5 minutos).
  2. Añade los hongos y cocine hasta que estén suaves (aproximadamente 5 minutos).
  3. Añade el orzo y tueste ligeramente, revolviendo frecuentemente, durante aproximadamente 3 minutos.
  4. Añade el caldo y caliente hasta que hierva. Reduzca el calor a fuego lento, revolviendo ocasionalmente, hasta que el orzo esté casi tierno, aproximadamente 8 minutos.
  5. Añade los tomates y cocine a fuego lento hasta que el orzo esté tierno (aproximadamente 2 minutos).
  6. Quite del calor y añade el queso crema, el ajo en polvo, la sal y la pimienta. Sirva caliente.
  7. Refrigere lo que sobre dentro de las siguientes 2 horas.
