Ingredients

TOPPING
¼ cup packed brown sugar
½ cup all-purpose flour
½ cup old fashioned rolled oats
¼ cup margarine or butter, melted
 
FRUIT FILLING
3 cups chopped rhubarb (fresh or frozen)
3 cups blueberries (fresh or frozen)
2 Tablespoons cornstarch
½ cup sugar
1 cup 100% fruit juice (any type)
1 teaspoon vanilla (optional)

Ingredientes

Cubierta
¼ de taza de azúcar morena
½ taza de harina blanca
½ taza de avena tradicional en hojuelas
¼ de taza de margarina o mantequilla, derretida
 
Relleno de fruta
3 tazas de ruibarbo picado (fresco o congelado)
3 tazas de arándanos azules (fresco o congelado)
2 cucharadas de maicena
½ taza de azúcar
1 taza de 100% jugo de fruta (cualquier tipo)
1 cucharadita de vainilla (opcional)

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F.
  3. In a medium bowl, stir together brown sugar, flour and oats. Mix in margarine or butter and set aside.
  4. Spread rhubarb and blueberries in an 8x8-inch baking dish and set aside.
  5. In a medium saucepan, mix cornstarch and sugar and stir in the juice. Cook over medium heat, stirring all the time, until the mixture has thickened. Turn off heat.
  6. Stir in vanilla, if desired. Pour mixture over rhubarb and blueberries.
  7. Crumble oat mixture on top of fruit.
  8. Bake for 45 minutes or until topping is browned and fruit is bubbling at edges. Serve warm or cold.
  9. Refrigerate leftovers within 2 hours.

Preparación

  1. Lávese las manos con agua y jabón 
  2. Precaliente el horno a 350 grados F.
  3. En un tazón mediano, mezcle la azúcar morena, la harina y la avena. Incorpore la margarina o mantequilla y ponga la mezcla a un lado.
  4. Coloque el ruibarbo y los arándanos azules en un molde para hornear de 8x8 pulgadas y ponga a un lado.
  5. En una cacerola mediana mezcle la maicena y el azúcar e incorpore el jugo. Cocine sobre fuego medio, revolviendo todo el tiempo, hasta que la mezcla se haya espesado. Apague el fuego.
  6. Incorpore la vainilla y vierta la mezcla encima del ruibarbo y los arándanos.
  7. Desmorone la mezcla de avena encima de la fruta.
  8. Hornee por 45 minutos o hasta que la cubierta se dore y la fruta esté burbujeando en los bordes. Sírva caliente o frío.
  9. Refrigere lo que sobre dentro de las siguientes 2 horas.

Notes

  • Try strawberries instead of blueberries.
  • Adding vanilla brings out sweet flavors of the fruit.
